Peanut Sauce

INGREDIENTS:

  • 3 small dried red chiles (like Thai or piquin), seeded, or cayenne or hot red pepper flakes, to taste
  • 3 garlic cloves
  • 2 shallots, peeled
  • 1 stalk lemongrass, white part only, peeled, trimmed, and thinly sliced (optional)
  • 2 teaspoons ground turmeric
  • 1 tablespoon peanut oil or neutral oil, like grapeseed or corn
  • 1 cup coconut milk (or substitute with stock or water for a lighter version)
  • 1 tablespoon brown sugar
  • 2 tablespoons soy sauce, or more to taste
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 cup chopped roasted peanuts or crunchy peanut butter
  • Salt

 

INSTRUCTIONS:

  1. In a food processor, combine the dried red chiles, garlic cloves, shallots, lemongrass (if using), and ground turmeric. Process until fairly smooth, scraping down the sides of the machine if necessary.
  2. Heat the peanut oil or neutral oil in a medium saucepan or skillet over medium heat. Once hot, add the chile-garlic mixture and cook until fragrant, about 1 minute.
  3. Add the coconut milk, brown sugar, soy sauce, freshly squeezed lime juice, and chopped roasted peanuts or crunchy peanut butter to the saucepan. Whisk until smooth and well combined.
  4. Simmer the sauce, stirring occasionally, for about 15 minutes until it thickens to your desired consistency. Taste and adjust the seasoning with a sprinkle of salt or more soy sauce if needed.
  5. Serve the Peanut Sauce immediately or refrigerate for up to a week. If refrigerated, gently warm the sauce over very low heat or in the microwave before using.
