INGREDIENTS:
- 2 cups all-purpose flour
- 1⁄4 cup sugar
- 1⁄4 cup firmly packed light brown sugar
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1 cup whole milk
- 1 large egg
- 1 cup smooth peanut butter
INSTRUCTIONS:
- Preheat the oven to 350°F. In a large mixing bowl, combine the flour, two sugars, baking powder, and salt and stir till well blended.
- In another bowl, whisk together the milk and egg, add to the dry mixture, and stir till just moistened. Gradually stir in the peanut butter till well blended, scrape the mixture into a 9 by 5 by 3–inch loaf pan, and bake till a knife inserted in the center of the loaf comes out clean, about 1 hour. Transfer the loaf to a rack and let cool.
