  • 1 carrot, cut into large cubes
  • 1 tablespoon smoked paprika
  • 3 teaspoons ground cumin
  • 1 cup (250ml) red wine
  • ¾ cup (185ml) Rosella Organic Tomato Sauce, plus extra to serve
  • 2 cups (500ml) beef stock

 

For the Puff Pastry Crust:

  • 2 sheets frozen puff pastry, thawed
  • 1 egg, lightly beaten

 

INSTRUCTIONS:

  1. Begin your culinary adventure by preheating your oven to 140°C (fan-forced), setting the stage for the slow-cooking magic that’s about to unfold.
  2. Heat a large ovenproof casserole dish over medium-high heat and add the olive oil. Sear the brisket on both sides until they achieve a glorious golden-brown hue. Once they’re perfectly browned, transfer the brisket to a plate and allow them to rest, building up anticipation for the succulent flavors ahead.
  3. In the same casserole dish, add the finely chopped onion, sliced garlic, celery, and carrot. Sauté them for about 3 minutes, letting their aroma fill the air and their flavors meld together.
