INGREDIENTS:

  • 8 to 12 ounces tortilla chips (1 big bag or about the amount of chips from the preceding recipe)
  • 2 cups grated cheddar, Jack, or other mild cheese
  • 1 1/2 cups well-seasoned cooked red, pink, or kidney beans, like Black Beans with Orange  (optional)
  • Chopped scallions (optional)
  • Chopped jalapeño chiles (optional)
  • 1 cup Fresh Tomato or Fruit Salsa or Salsa Roja

 

INSTRUCTIONS:

  1. Heat the oven to 375°F. Meanwhile, warm the beans if you’re using them.
  2. Spread the chips in one layer in a shallow pan with a rim, such as a pizza pan or a baking sheet.
  3. Top with the beans if using, then the cheese, and bake until the cheese melts, about 10 minutes.
  4. Sprinkle with the scallion and/or jalapeño if you’re using them and serve immediately with a bowl of salsa on the side.
