- 1 egg yolk

- Scrub each mussel under running water and remove the “beard.”
- In a large kettle, cook mussels, wine, onion, pepper and salt, covered, shaking pot every 2–3 minutes to ensure even distribution of heat. After about 5 minutes, when all mussels are opened (a few may not), remove from heat. Place cheesecloth in a colander over a bowl, and strain. Reserve liquid, letting it cool, but
- keep mussels warm, covered.
- In a pan, sauté shallots in butter, stir in flour, and cook into a pale roux. Add reserved liquid, a little at a time, to form a light sauce. Add cream, curry, and pepper, and heat through.
- At serving time, place the egg yolk in a bowl. Pour in a little of the hot cream sauce, stirring steadily with a wooden spoon, and then gradually work in the rest of the sauce. (Do not return sauce to heat after combining with egg yolk, or it will “turn.”)
- Pour the sauce over the warm mussels, toss well, and serve directly.
