INGREDIENTS:

  • 10 ounces white mushrooms, trimmed and sliced ¼ inch thick
  • 9 tablespoons extra-virgin olive oil
  • Salt and pepper
  • ¼ cup water
  • ¼ cup grated Parmesan cheese, plus extra for serving
  • ¼ cup packed fresh parsley leaves
  • 1 tablespoon fresh thyme leaves
  • 1 small shallot, chopped coarse
  • 3 garlic cloves, toasted (see note) and minced
  • ½ ounce dried porcini mushrooms, rehydrated (see note) and minced
  • 1 pound pasta

 

PREPARATIONS:

  1. Adjust the oven rack to the lowest position and preheat the oven to 450 degrees Fahrenheit.
  2. Toss the white mushrooms with 2 tablespoons of oil, ¼ teaspoon of salt, and ¼ teaspoon of pepper. Spread them evenly over an aluminum foil-lined rimmed baking sheet. Roast, stirring occasionally, until browned, about 25 minutes.
  3. Process the roasted mushrooms, remaining 7 tablespoons of oil, water, grated Parmesan, parsley, thyme, shallot, garlic, and rehydrated porcini in a food processor until smooth, 30 to 60 seconds, scraping down the bowl as needed.
  4. Transfer the pesto mixture to a medium bowl and season with salt and pepper to taste.
