INGREDIENTS:

  • 100 g Western Star Spreadable Original Soft
  • 4 garlic cloves, crushed
  • 2 fresh thyme sprigs
  • ½ cup (125 mL) Western Star Thickened Cream
  • 2 kg medium white-skinned potatoes
  • ½ cup finely grated parmesan cheese
  • Salt, to taste
  • Pepper, to taste

 

INSTRUCTIONS:

  1. Preheat the oven to 200°C / 180°C fan-forced. Lightly grease a 12-hole, 1/3 cup-capacity non-stick muffin pan using 15 g of the Spreadable.
  2. Heat the remaining Spreadable in a small saucepan over medium heat. Cook the crushed garlic and thyme, stirring, for 2 minutes or until fragrant. Add the thickened cream and bring it to a boil. Remove from heat, season, and set aside to allow the flavors to infuse.
  3. Use a mandolin or v-slicer to thinly slice the potatoes. Transfer the sliced potatoes to a bowl and strain the infused cream mixture over them. Discard any solids left in the strainer. Add the finely grated parmesan cheese and season with salt and pepper. Toss the potatoes gently to ensure they are coated evenly.
  4. Divide the potato slices between the holes of the prepared muffin pan. Spoon over the remaining cream mixture. Cover the pan with baking paper and foil, then place it on a large baking tray. Bake for 30 minutes. Remove the foil and baking paper, and bake for an additional 20-25 minutes or until the gratins turn golden and the potatoes are tender.
  5. Allow the gratins to stand in the pan for about 10 minutes to firm up. Run a sharp knife around each stack to loosen them, then carefully remove them from the pan.
