  5. Once the desired thickness is achieved, remove the saucepan from the heat.
  6. In a food processor, blend the vanilla, blueberries, and raspberry juice and pulp until they form a smooth mixture.
  7. Stir the berry and vanilla mixture into the liquid custard. To ensure a velvety texture, strain the mixture through a fine strainer into a plastic bowl.
  8. Cover the bowl and allow the mixture to refrigerate overnight. This resting period is essential for the flavors to meld and intensify.
  9. Transfer the chilled mixture to an ice cream maker and follow the manufacturer’s instructions to churn the gelato.
  10. Freeze the churned gelato until it is ready to be served.
