Drizzle this gingery dressing over avocados, tomatoes, and shredded cabbage. You could also try it as a sauce for tofu or fish.
MAKES: 1/2 CUP
INGREDIENTS:
- 1/2 teaspoon sliced fresh ginger
- 1/2 teaspoon sliced garlic
- 1/2 teaspoon sliced jalapeño
- 3 tablespoons safflower oil
- 3 tablespoons plain unsweetened coconut milk beverage (not canned)
- 2 tablespoons red miso
- 2 tablespoons fresh, strained lime juice
- 1 teaspoon agave nectar
INSTRUCTIONS:
- Add the first three ingredients to the bowl of a mini food processor, and process until finely chopped, about 10 seconds. Add the remaining ingredients, and process until smooth, about 50 seconds.
