There’s something undeniably comforting about a big, cheesy, and meaty homemade lasagna. However, this classic dish is often designed to serve a large gathering and can be time-consuming to prepare. For those seeking a more intimate and quicker version of this beloved meal, we present a delicious solution. In this scaled-down recipe, we’ve transformed the traditional lasagna into a petite delight, perfect for a couple, by utilizing a loaf pan and no-boil lasagna noodles. To achieve a rich and complexly flavored meat sauce without the lengthy simmering process, we turned to a meatloaf mix consisting of ground beef, pork, and veal, adding a touch of cream for added richness. Additionally, the combination of diced and sauced tomatoes creates a luscious sauce that coats the noodles to perfection. We’ve included essential tips to ensure this miniature lasagna retains its mouthwatering qualities. So, if you’re ready to indulge in all the goodness of lasagna on a smaller scale, follow this recipe for a satisfying and delightful meal.

INGREDIENTS:

  • 1 tablespoon olive oil
  • 1 small onion, chopped fine
  • Salt and pepper
  • 2 garlic cloves, minced
  • 8 ounces meatloaf mix
  • 2 tablespoons heavy cream
  • 1 (14.5-ounce) can dice tomatoes, drained with ¼ cup juice reserved
  • 1 (8-ounce) can of tomato sauce
  • 4 ounces (½ cup) whole-milk or part-skim ricotta cheese
  • 1 ounce Parmesan cheese, grated (½ cup), plus 2 tablespoons
  • 3 tablespoons chopped fresh basil
  • 1 large egg, lightly beaten
  • 4 no-boil lasagna noodles
  • 4 ounces whole-milk mozzarella cheese, shredded (1 cup)

PREPARATIONS:

  1. Heat olive oil in a large saucepan over medium heat until shimmering. Add chopped onion and ⅛ teaspoon salt; cook until softened and lightly browned, 5 to 7 minutes. Stir in minced garlic and cook until fragrant, about 30 seconds. Add the meatloaf mix and cook, breaking up the meat with a wooden spoon, until it is no longer pink, about 2 minutes.
  2. Stir in the heavy cream, bring to a simmer, and cook until the liquid evaporates about 2 minutes. Add the drained tomatoes, reserved tomato juice, and tomato sauce. Bring to a simmer and cook until the flavors meld, about 2 minutes. Season with salt and pepper to taste.
  3. Adjust the oven rack to the middle position and preheat the oven to 400 degrees Fahrenheit. In a bowl, combine the ricotta, ½ cup Parmesan, chopped basil, egg, ⅛ teaspoon salt, and ⅛ teaspoon pepper.

TIPS:

  • If you can’t find meatloaf mix, you can substitute equal parts 80 percent lean ground beef and sweet Italian sausage (casings removed).
  • Do not use fat-free ricotta as a substitute; it won’t provide the same creamy richness to the lasagna.

YIELD: 2 servings
