This is the easiest fancy brunch dish ever. It looks like you spent much more time than you did on it, so don’t feel bad about asking guests to bring the sparkling wine and orange juice! The kala namak salt makes the tofu taste exactly like scrambled eggs, and it’s colored with turmeric so it looks like scrambled eggs too.

TOTAL COOKING TIME: 20 minutes
YIELD: 12 servings, 7 ounces (200 g) tofu scramble
INGREDIENTS:
- Three 8-inch (20-cm) whole wheat tortillas, cut into quarters (use gluten-free)
FOR THE TOFU SCRAMBLE:
- 7 ounces (200 g) tofu or half the amount in a 16 ounce (455 g) container, drained and pressed for 20 minutes (up to overnight if you are a planner)
- 1/2 teaspoon kala namak salt
- 1/2 teaspoon turmeric
- 1/4 teaspoon paprika (plain or smoked)
- 3/4 cup (83 g) Bean Chorizo Crumbles (page 23) or store-bought vegan chorizo
- 3/4 cup (about 195 g) of your favorite salsa (fire-roasted is my favorite)
- Toppings such as vegan shredded cheese, vegan sour cream, and olives (optional)
INSTRUCTIONS:
- Preheat the oven to 350°F (180°C, or gas mark 4). Spray a muffin tin with oil or line with paper liners.
- Press 1 tortilla piece into each muffin cup, completely covering the bottom of the tin. This will help it hold the filling. (The ends will stick up, making a decorative mini tortilla cup.)
- Bake the empty tortilla cups in the oven for 10 minutes or until they are starting to get crisp, but not very brown. (You will be cooking them for 10 more minutes after they’re filled.)
- Meanwhile, make the tofu scramble by crumbling the tofu into a bowl and mixing in the spices until the tofu has taken on the yellow turmeric color.
- Remove the tortillas from the oven and add 1 tablespoon (15 g) chorizo to each tortilla cup.
- Layer 1 tablespoon tofu (15 g) scramble on top of the chorizo, and then top that with 1 tablespoon (16 g) salsa.
- You can top with shredded cheese, olives, or other toppings before putting them back in the oven, or simply have bowls of toppings at the table for customization.
- Bake the filled cups for 10 more minutes or until heated through.
