Marshmallow Meringue

Marshmallow Meringue is delicious, thick, silky, and oh-so delightfully sweet. Use this satisfying meringue to top ice cream pies, such as Lime Ice Cream Pie or in your own baked pie recipes.

INGREDIENTS | YIELD: 4 CUPS

  • ¾ cup sugar
  • 1½ teaspoons light corn syrup
  • 2 ounces water
  • 6 egg whites

 

INSTRUCTIONS:

  1. In a heavy-bottomed saucepan, stir sugar, corn syrup, and water to a boil. Bring temperature to 240°F (soft ball stage).
  2. When sugar mixture reaches 220°F, begin to whip the egg whites on medium-high speed until soft peaks form. By the time you reach soft peaks, the sugar mixture should be at 240°F.
  3. Turn the speed down to medium and pour the hot sugar in slowly and steadily, being careful to avoid the whisk if you can.
  4. Once all the sugar mixture is incorporated, turn the speed back up to medium-high and beat for 15 minutes.
  5. Cover and chill until ready to pipe.
