Marshmallow Meringue is delicious, thick, silky, and oh-so delightfully sweet. Use this satisfying meringue to top ice cream pies, such as Lime Ice Cream Pie or in your own baked pie recipes.
INGREDIENTS | YIELD: 4 CUPS
- ¾ cup sugar
- 1½ teaspoons light corn syrup
- 2 ounces water
- 6 egg whites
INSTRUCTIONS:
- In a heavy-bottomed saucepan, stir sugar, corn syrup, and water to a boil. Bring temperature to 240°F (soft ball stage).
- When sugar mixture reaches 220°F, begin to whip the egg whites on medium-high speed until soft peaks form. By the time you reach soft peaks, the sugar mixture should be at 240°F.
- Turn the speed down to medium and pour the hot sugar in slowly and steadily, being careful to avoid the whisk if you can.
- Once all the sugar mixture is incorporated, turn the speed back up to medium-high and beat for 15 minutes.
- Cover and chill until ready to pipe.
