Marinated Camembert with Pear-Apple Chutney

INGREDIENTS:

FOR THE CAMEMBERT:

  • 1 Camembert cheese
  • 1 bottle of poiré (pear cider)

 

FOR THE CHUTNEY:

  • 2 Gala apples
  • 2 Bartlett pears
  • 2 cups of sugar
  • 1 cup of raisins
  • 1 cup of cider vinegar
  • 1 cup of balsamic vinegar
  • 2 cloves
  • 1 cinnamon stick
  • 1/4 teaspoon of ground ginger
  • Pinch of cayenne pepper
  • Salt

 

INSTRUCTIONS:

  1. Cut the Camembert cheese into four equal pieces without separating them. Place the cheese in a flat bowl.
  2. Pour pear cider over the Camembert, making sure it is fully covered. Put a lid on the bowl and refrigerate for 24 hours to marinate the cheese.
  3. Peel, core, and chop the Gala apples and Bartlett pears.
  4. In a saucepan, combine the chopped apples and pears with the remaining chutney ingredients, including 2 cups of sugar, 1 cup of raisins, 1 cup of cider vinegar, 1 cup of balsamic vinegar, 2 cloves, 1 cinnamon stick, 1/4 teaspoon of ground ginger, a pinch of cayenne pepper, and salt to taste.
  5. Heat the saucepan to a high bubble and cook the mixture until it turns syrupy. The fruit should remain discrete but tender. Allow the chutney to cool.
  6. Remove the Camembert from the pear cider marinade and drain off any excess liquid. Slice the cheese thinly.
  7. Arrange the Camembert slices on a platter.
  8. Top each Camembert slice with a teaspoon of the prepared pear-apple chutney.
  9. Serve the Marinated Camembert with Pear-Apple Chutney with additional poiré (pear cider) on the side.
