  • Olive oil, for tossing
  • Fine sea salt and freshly ground black pepper
  • 5 fresh basil leaves, torn in half
  • 2½ ounces (70 grams) mozzarella di bufala, well-drained
  • Extra virgin olive oil in a spouted container, for drizzling

 

PREPARATIONS:

  1. Prepare a wood-fired oven or ready your home oven as instructed.
  2. Follow the instructions on this page for Wood-Fired Oven Baking or Home-Oven Broiler Method to prepare the dough.
  3. Cut large cherry tomatoes into quarters and smaller tomatoes in half, placing them in a bowl.
  4. Toss the tomatoes with chopped garlic, a light coating of olive oil, and season with salt and pepper. Set aside.
  5. Arrange basil leaves over the dough, followed by mozzarella pieces.
  6. Use some of the cheese to cover part of each basil piece to prevent burning.
  7. Scatter the tomatoes over the pizza and sprinkle with salt.
  8. Drizzle a spiral of extra virgin olive oil over the surface.
  9. Bake the pizza as directed for Wood-Fired Oven Baking or Home-Oven Broiler Method.
  10. Transfer the pizza to a cutting board and cut into 6 wedges.
