INGREDIENTS:
- 3 lobsters
- 20 tablespoons salted butter
- 4 tablespoons peanut oil
- Pinch of cayenne pepper
- Pepper and salt
- 3 ounces cognac
- 1 bottle white wine, preferably Muscadet
- 5 shallots, minced
- 3 onions, minced
- 3 garlic cloves, minced
- 1 cup parsley, finely chopped
- 1 tablespoon tarragon
- 1/4 cup tomato paste
INSTRUCTIONS:
- Take the live lobsters, detach the heads and claws, and chop the bodies into 3–4 pieces. Reserve all the liquid that comes out in a bowl and scoop the green matter into the bowl as well. If you prefer, you can ask the fishmonger to do this step.
- In a large skillet over high heat, melt 10 tablespoons of butter with the oil. Sauté the lobster pieces in the skillet, turning them with tongs until they turn bright red, which takes about 3 minutes on each side. Sprinkle with cayenne, pepper, and salt. Pour in the cognac and ignite it. Allow the flames to subside, then pour in the Muscadet.
- In another skillet, melt 7 tablespoons of butter and sauté the shallots and onions. Stir in the garlic, parsley, tarragon, and tomato paste. Add this onion mixture to the skillet with the lobster, tossing well with a wooden spoon to distribute the ingredients evenly. Cook for 15 minutes, stirring regularly.
- With tongs, remove the lobster pieces from the skillet and place them on a serving platter. Keep them warm. Continue to cook the sauce in the skillet over high heat, reducing it by half.
- In a large saucepan, mash the remaining 3 tablespoons of butter with the reserved green matter and liquid from the raw lobsters. Place a sieve over the saucepan and strain the contents of the skillet into the saucepan. Whisk well, then add the lobster pieces back to the saucepan and rewarm them for a few minutes.
