INGREDIENTS:

  • 1 cup dried brown lentils, washed and picked over
  • 3 1/2 cups water, coconut milk, or stock
  • 1 tablespoon curry powder
  • 2 medium starchy potatoes, peeled and cut into large chunks
  • Salt and freshly ground black pepper
  • Yogurt for garnish
  • Chopped fresh cilantro leaves for garnish

 

INSTRUCTIONS:

  1. In a medium saucepan, combine the lentils, liquid (water, coconut milk, or stock), and curry powder. Bring the mixture to a boil over medium-high heat.
  2. Reduce the heat to medium-low, partially cover the saucepan, and let it simmer gently. Stir occasionally until the lentils start to absorb the liquid, approximately 15 minutes.
  3. Add the potato chunks to the saucepan and cover it completely. Allow the mixture to cook undisturbed for about 10 minutes. Gently stir and check the lentils to ensure they are not too dry. If needed, add a little more liquid. Season with salt as the lentils become tender.
  4. Cover the saucepan again and continue cooking until the lentils are soft and beginning to turn to mush, and the potatoes are tender at the center. This will take another 5 to 10 minutes. Adjust the liquid if necessary, aiming for a moist but not soupy consistency.
  5. Stir in lots of black pepper, taste the dish, and adjust the seasoning as needed.
  6. Serve the lentils and potatoes garnished with yogurt and chopped cilantro leaves.

  • For a smoother and more flavorful dish, in Step 2, stir in 2 tablespoons of cold butter when you check and stir the mixture.
