The lentils provide a good source of plant-based protein and fiber, making this stew not only delicious but also filling and nourishing. The addition of chicken broth adds depth and richness to the broth, enhancing the overall flavor of the dish.

The tomatoes bring a hint of acidity and sweetness, while the potatoes and carrots contribute a comforting and hearty texture. The chopped onion and celery add a savory and aromatic element to the stew, though they are optional if you prefer a simpler flavor profile.

To enhance the taste and aroma, a few sprigs of parsley and basil are added along with minced garlic, infusing the stew with fresh and herbaceous notes. The cubed lean pork or beef adds a meaty and substantial element, making the stew even more satisfying.

By using a slow cooker, the flavors have ample time to meld together and develop into a rich and flavorful stew. Simply dump all the ingredients into the slow cooker and let it simmer on low heat for a few hours. The result is a thick and comforting stew that is perfect for chilly evenings or anytime you crave a hearty and nourishing meal.

This stew can be enjoyed on its own as a complete meal, or you can serve it with some crusty bread or rice for a more substantial option. Leftovers can be stored in the refrigerator and reheated for future meals, allowing you to enjoy the flavors of this delicious stew for days to come.
