Kale Pork Stew

INGREDIENTS:

  • 1 tbsp. coconut oil
  • 1 pound pork tenderloin, trimmed and cut into 1-inch pieces
  • 3/4 tsp. salt
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 teaspoons paprika
  • 1/4 tsp. crushed red pepper (optional)
  • 1 cup white wine
  • 4 plum tomatoes, chopped
  • 4 cups chicken broth
  • 1 bunch kale, chopped
  • 2 cups cooked white beans

 

 

INSTRUCTIONS:

  1. In a large skillet, heat the coconut oil over medium-high heat.
  2. Season the pork tenderloin pieces with salt.
  3. Add the pork to the skillet and cook until browned on all sides.
  4. Transfer the browned pork to a slow cooker.
  5. In the same skillet, add the finely chopped onion and minced garlic.
  6. Sauté until the onion becomes translucent and the garlic becomes fragrant.
  7. Stir in the paprika and crushed red pepper (if using) and cook for an additional minute.
  8. Pour in the white wine and scrape the bottom of the skillet to deglaze any browned bits.
  9. Transfer the onion and garlic mixture to the slow cooker, on top of the pork.
  10. Add the chopped plum tomatoes, chicken broth, chopped kale, and cooked white beans to the slow cooker.
  11. Stir all the ingredients together in the slow cooker to combine them well.
  12. Set the slow cooker to low heat and cook for approximately 4 hours, or until the pork is tender and the flavors have melded together.
  13. Once cooked, taste the stew and adjust the seasoning if necessary.
  14. Serve the Pork and White Bean Stew hot, garnishing with fresh herbs like parsley or cilantro, if desired.
