INGREDIENTS:

  • 2 small dried Thai or other hot chiles

  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon ground fenugreek
  • 1 tablespoon ground turmeric
  • 1 tablespoon ground ginger
  • Cayenne, to taste (optional)

 

INSTRUCTIONS:

  1. In a medium skillet, combine the dried chiles, black peppercorns, coriander seeds, cumin seeds, and fennel seeds.
  2. Toast the mixture over medium heat, shaking the pan occasionally, until the spices are lightly browned and emit a fragrant aroma. This process should take just a few minutes. During the last minute of cooking, add the ground fenugreek, ground turmeric, and ground ginger.
  3. Allow the toasted spices to cool to room temperature.
  4. Transfer the spices to a spice grinder or coffee grinder.
  5. Grind the spices until they form a fine powder. For an extra kick, add cayenne pepper to taste at this stage. Be cautious with the amount of cayenne used, as it can significantly increase the heat level.
