INGREDIENTS:

  • 2 cups brown rice
  • 2 cup chopped onions
  • 2 tbsp. coconut oil
  • Salt, ground black pepper and ground cumin to taste
  • 4 cups chicken stock
  • 3 pounds ground chicken
  • 16 large green, yellow and red peppers

 

INSTRUCTIONS:

  1. Mix chopped onions, ground meat and brown rice.
  2. Cut off the peppers stems and fill peppers with the mixture.
  3. Arrange peppers in the slow cooker and pour stock between peppers.
  4. Cover, and cook on low for 7 to 9 hours.
