INSTRUCTIONS:

  1. In a blender, combine the tomatoes, cucumber, torn bread, olive oil, vinegar, garlic, and 1 cup of water. Process the mixture until smooth. If the gazpacho seems too thick, you can thin it out with additional water.
  2. Taste the gazpacho and adjust the seasoning according to your preference. Add salt, pepper, and more vinegar if desired.
  3. Serve the gazpacho immediately or refrigerate for a couple of hours before serving. When ready to serve, garnish each serving with a drizzle of olive oil.
