  • 6 1/2 cups chicken, beef, or vegetable stock (or water)
  • 1/2 cup bread crumbs, preferably fresh

 

INSTRUCTIONS:

  1. Put the noodles in a sturdy bag and break them into 1- to 2-inch pieces by whacking them with a rolling pin or the back of a knife.
  2. In a large, deep pot, heat the olive oil over medium-low heat.
  3. Add the minced garlic and cook, stirring frequently, until it becomes soft and begins to color, for about 5 to 8 minutes.
  4. Increase the heat to medium-high. Add the broken noodles to the pot, sprinkle with salt and pepper, and cook, stirring almost constantly, until the noodles darken for about a minute or two. Some pieces may cook darker than others, but avoid letting more than a few pieces blacken.
  5. Stir in the sweet paprika and 1/4 cup of chopped herbs, coating the noodles evenly with the spices. Cook for a minute to infuse the flavors.
