INGREDIENTS:

  • 2 cups whole milk
  • 1⁄4 cup egg yolks
  • 1⁄2 cup white granulated sugar

  4. Return the combined mixture to the saucepan and cook over low heat. Stir continuously until the mixture thickens enough to coat the back of a spoon. Consistent stirring ensures a smooth texture and prevents lump formation.
  5. Strain the mixture through a fine strainer if any lumps develop, restoring its velvety consistency.
  6. Cover the gelato mix and refrigerate it for at least 4 hours or opt for overnight chilling to allow flavors to meld.
  7. Once the gelato base is thoroughly chilled, pour it into an ice cream machine and follow the manufacturer’s instructions for freezing. The gelato will attain a soft-serve consistency.
  8. Gently fold in the rainbow sprinkles, distributing them evenly throughout the gelato. This step adds a colorful and playful touch to the dessert.
  9. Transfer the semi-frozen gelato to a freezer-safe container and allow it to freeze for approximately two hours. This solidifies the gelato while preserving its creamy texture.
