Fried Rice Balls

Fried Rice Balls, also known as Supplì, are a delightful Roman treat that makes excellent use of leftover rice, particularly risotto. These delectable snacks are aptly named supplì al telefono due to their unique characteristic of having a stretchy mozzarella center that resembles telephone wires when you take a bite. The recipe calls for unseasoned packaged bread crumbs, although homemade bread crumbs are preferred. Fried Rice Balls can be enjoyed as a snack or served as a casual starter. With a cooking time of just 30 minutes using pre-cooked rice, they are quick and easy to prepare.

MAKES: 6 to 8 servings

TIME: 30 minutes with cooked rice

 

INGREDEINTS:

  • 3 eggs
  • 2 cups cold cooked rice, preferably Risotto alla Milanese
  • 3 ounces fresh mozzarella, chopped
  • 2 ounces prosciutto, minced (optional)
  • 2 cups fresh bread crumbs, preferably homemade
  • Neutral oil, like grapeseed or corn, for deep-frying

 

INSTRUCTIONS:

  1. Break one of the eggs into the rice and mix well.
  2. Form the rice into 2-inch balls. With your thumb, make a small indentation in the center of each ball, fill with a little mozzarella and prosciutto (if you’re using it), and reseal the ball with the risotto around it.
  3. Lightly beat the remaining 2 eggs. Dip each ball into the egg mixture and then the bread crumbs.
  4. Set the finished balls on wax paper; they can be refrigerated for up to a couple of hours or cooked right away.
  5. Put at least 3 inches of oil in a deep pan on the stove and turn the heat to medium-high; bring to 350°F.
  6. Gently slide the balls into the oil and fry until golden brown, turning once if necessary, about 4 minutes.
  7. Drain the fried rice balls on paper towels and serve them hot or at room temperature.
