FRESH ASHTA (LEBANESE CLOTTED CREAM)

Since it is difficult to come by ashta, you can make your own. But it requires time and patience.

MAKES: ⅖ Cup

 

INGREDIENTS:

  • 2½ Cups (593ml) whipping cream

 

INSTRUCTIONS:

  1. Pour the cream into a heatproof bowl and allow to simmer gently in a water bath for 1½ to 3 hours, until it begins to thicken. Do not stir the cream and make sure that it does not boil.
  2. Remove the bowl and let it stand in the refrigerator for at least 12 hours. Lift up the thick and creamy surface with a perforated ladle. Stir until it is smooth and supple.
