INGREDIENTS:

  • 1 (5 lb) rump roast
  • 1 tablespoon garlic powder
  • 1 tablespoon black pepper (start with 1 tsp)
  • 1 teaspoon seasoning salt
  • 1 teaspoon oregano
  • 1/2 teaspoon rosemary
  • 2 instant Oxo or 2 bouillon cubes
  • 2 (14 ounce) cans beef broth
  • 1 large onion, diced

INSTRUCTIONS:

  1. Place all the ingredients in a crock pot.
  2. Cook on High for 5-6 hours or Low for 8-10 hours until the meat is tender and easily shreddable.
  3. Remove the meat from the crock pot and place it on a deep plate to collect the juices.
  4. Strain the broth well to remove any spices or onions, ensuring that it is clear.
  5. Transfer the strained broth to a saucepan and keep it warm.
  6. While the broth is heating, you can choose to thicken it slightly by stirring in a small amount of cornstarch mixed with cold water.
  7. Don’t forget to add the juices that drained off the meat to the broth for additional flavor.
  8. Heat the Hoagie buns until they are warm and slice the cooked meat thinly.
  9. Place a generous amount of sliced meat in each Hoagie bun and serve with individual ramekins of the flavorful Au Jus for dipping.

SPECIAL INSTRUCTIONS:

  • For added depth of flavor, sear the rump roast in a hot skillet before placing it in the crock pot.
  • If desired, top the sliced meat with melted cheese, such as provolone or Swiss, and broil briefly until the cheese is melted and bubbly.
  • Serve the French Dip sandwiches with a side of crispy French fries or a fresh green salad for a complete and satisfying meal.
