INGREDEINTS:

  • 1/2 pound cream cheese
  • 1/4 pound Roquefort, Maytag blue, or other good blue cheese
  • Sour cream or yogurt, as needed
  • Cayenne or Tabasco or other hot sauce, to taste

 

INSTRUCTIONS:

  1. In a bowl, cream together the cream cheese and blue cheese using a fork until well combined.
  2. Stir in enough sour cream or yogurt to thin the mixture to a spreading consistency. Add more if desired to create a dip-like texture.
  3. Add cayenne or hot sauce to taste, giving the spread a hint of spice.
  4. Refrigerate the spread until ready to use.

 

VARIATION:

  • Cream Cheese Spread with Fruit and Nuts: This variation adds a delightful touch of sweetness and crunch. After combining the cheeses, stir in 1/2 cup each of minced dried fruit (such as prunes, apricots, cherries, apples, or cranberries) and chopped nuts (such as hazelnuts, walnuts, almonds, pecans, or pistachios). Omit the hot sauce.
  • Roasted Pepper and Garlic Spread: For a burst of flavor, omit the blue cheese and incorporate 1/2 cup chopped Roasted Red Peppers (or use jarred pimientos) and about 1/2 head Roasted Garlic to the cream cheese. Instead of sour cream, thin the spread with extra virgin olive oil. Mash well and proceed as directed. Season with salt, pepper, and lemon juice instead of cayenne.
  • Anchovy Spread: A savory option, omit the blue cheese and add 4 mashed anchovy fillets (or more to taste) and 1/4 teaspoon minced garlic to the cream cheese. Mash well, and if needed, use olive oil, sour cream, or yogurt to thin the spread. Replace cayenne with black pepper and lemon juice.
  • Crab or Shrimp Spread: Create a delightful seafood twist by omitting the blue cheese and adding about 1 cup of shredded or minced cooked crabmeat or shrimp, 1 tablespoon mayonnaise, and a few dashes of Worcestershire or soy sauce to the cream cheese.   • Cheese-and-Herb Dip or Spread: For a smooth and herbaceous option, use a blender or food processor to combine the ingredients. Thin with a little milk or cream as needed. Add 2 tablespoons minced fresh parsley leaves, 1/2 teaspoon minced garlic, and 1 teaspoon minced fresh marjoram, oregano, sage, or thyme leaves.
