Fennel and Orange Salad

Fennel and Orange Salad is a delightful dish that brings together the distinct flavors of crunchy fennel and sweet oranges. This salad is often overlooked, but once you try it, you’ll discover the magic of this underrated vegetable and its compatibility with citrus fruits.

MAKES: 4 servings

TIME: 15 minutes

INGREDIENTS:

  • 1 pound fennel (1 large or two small bulbs)
  • 3 small sweet oranges or tangerines
  • Salt
  • 1 tablespoon freshly squeezed lime or lemon juice
  • 2 tablespoons chopped fresh cilantro, basil, or chervil leaves

INSTRUCTIONS:

  1. Begin by trimming and coring the fennel. Cut it into small cubes, about 1/4 inch in size, or opt for thin slices. Alternatively, you can use a mandoline to shave the fennel into delicate, paper-thin slices.
  2. Squeeze the juice from one of the oranges and pour it over the fennel. Add a pinch of salt and the freshly squeezed lime or lemon juice. Allow the fennel to marinate for a few hours to enhance the flavors.
  3. Meanwhile, peel the remaining oranges and slice them into wheels. Remove any pits or tough, fibrous parts.
  4. Add the sliced oranges and the chopped fresh cilantro, basil, or chervil leaves to the marinated fennel. Gently toss the ingredients together to combine.
  5. Taste the salad and adjust the seasoning as needed, adding more salt or citrus juice if desired.
  6. Serve the Fennel and Orange Salad immediately and enjoy its refreshing flavors.

VARIATIONS:

  • Red Onion and Orange Salad: Replace the fennel with thinly sliced red onion. Swap the cilantro for 1 teaspoon of fresh rosemary leaves or 1/2 teaspoon of dried rosemary. Instead of juicing the oranges, peel and chop them all. Omit the lime juice for this variation.
  • Jícama and Orange Salad: Substitute the fennel with shaved or julienned jícama. Use the same amount of cilantro for added freshness.

These variations provide alternative flavor profiles to suit your preferences or ingredient availability.
