Fava Bean and Mint Salad with Pecorino

INGREDIENTS:

  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons freshly squeezed lemon juice
  • 1/2 teaspoon sugar
  • 3 pounds fresh fava beans, shucked, blanched, and shelled, or frozen edamame, peas, or lima beans (approximately 3 cups cleaned)
  • 1 cup fresh mint leaves
  • Salt and freshly ground black pepper
  • 1 cup crumbled or shaved pecorino or Parmesan cheese
  • 1 tablespoon grated lemon zest for garnish (optional)

 

INSTRUCTIONS:

  1. In a large bowl, whisk together the olive oil, lemon juice, and sugar until the sugar is dissolved.
  2. Add the shucked, blanched, and shelled fava beans (or other chosen beans) to the dressing. Add the fresh mint leaves as well and toss to coat all the ingredients.
  3. Taste the salad and season with additional salt if needed. Sprinkle a dash of freshly ground black pepper for added flavor.
  4. Garnish the salad with crumbled or shaved pecorino or Parmesan cheese.
  5. Serve the Fava Bean and Mint Salad immediately, and if desired, garnish with grated lemon zest for an extra citrusy touch.
