Egg and Smoked Trout Croissants

INGREDIENTS:

  • 1 tablespoon extra virgin olive oil
  • 4 eggs
  • 4 large croissants
  • ½ cup crème fraiche
  • 1 tablespoon chopped chives, plus extra to serve
  • ½ lemon, grated zest, and 2 teaspoons of juice
  • 1 cup watercress
  • 100g smoked ocean trout slices
  • Lemon wedges, to serve

 

INSTRUCTIONS:

  1. Heat the extra virgin olive oil in a large non-stick frying pan over medium-high heat. Crack the eggs one at a time into the hot pan. Cook the eggs for about 2 minutes, until the whites set and become crispy around the edges. Remove the eggs from the pan and set aside.
  2. Split the large croissants in half and place them cut-side up on an oven tray lined with baking paper. Toast the croissants under the grill for 30 seconds to 1 minute until they turn golden and lightly toasted.
  3. In a small bowl, combine the crème fraiche, chopped chives, grated lemon zest, and lemon juice. Season the mixture with salt and pepper, and mix well.
  4. Spread the crème fraiche mixture on the bases of each croissant. Top with a handful of fresh watercress, followed by folds of smoked ocean trout slices.
  5. Place a fried egg on top of each croissant, adding a touch of richness and creaminess to complement the smoky trout.
  6. Scatter some extra chopped chives on top and add a grind of black pepper.
