  • 1 just-ripe avocado, skin and seed removed, sliced
  • 4 slices Swiss cheese

 

INSTRUCTIONS:

    1. Preheat your oven to 200°C / 180°C fan-forced. Grease and line a baking tray with baking paper, ensuring easy cleanup later.
    2. Place one chicken breast between two sheets of baking paper. Gently flatten it with a rolling pin until it’s about ½ cm thick. Repeat this process with the remaining chicken breasts.
    3. Prepare the coating for the chicken by setting up three shallow bowls. In the first bowl, place the plain flour. In the second bowl, lightly whisk the eggs. In the third bowl, spread out the Panko breadcrumbs.
    4. Coat each chicken breast in flour, shaking off any excess. Then dip the floured chicken in the whisked eggs, ensuring it’s evenly coated. Next, press the chicken into the breadcrumbs, making sure both sides are covered.
