INGREDIENTS:

  • 1 1/2 cups dried breadcrumbs
  • 1/3 cup parsley, chopped
  • 1/3 cup Perfect Italiano Parmesan, shredded
  • Grated rind of 1 lemon
  • 4 large firm white fish fillets (blue eye, flake etc), cut into thick strips
  • 60g Western Star Salt Reduced Butter, melted
  • Tatare sauce and crispy green salad, for serving

METHOD:

  1. Start by preheating your oven to 220°C and line oven trays with baking paper.
  2. In a large bowl, combine the dried breadcrumbs, chopped parsley, shredded Perfect Italiano Parmesan, and grated lemon rind. Mix these ingredients together thoroughly.
  3. Take the fish fillet strips and toss them in the melted Western Star Salt Reduced Butter. Make sure each strip is coated evenly with the butter.
  4. Next, coat the butter-coated fish strips with the breadcrumb mixture. Gently press the breadcrumbs onto the fish to ensure they adhere well. Shake off any excess crumbs.
  5. Place the coated fish fingers onto the prepared baking trays. Make sure to leave some space between each piece for even baking.
  6. Bake the fish fingers in the preheated oven for about 10-15 minutes. Keep an eye on them and remove them when they are crisp, cooked through, and golden in color.
  7. Once the fish fingers are ready, serve them warm with a side of tangy tartare sauce and a crispy green salad.
