YIELD: This recipe makes approximately 14 bites with a generous 1 cup (160 g) of Mango Salsa.
INGREDIENTS:
For Mango Salsa:
- 1/2 cup (80 g) minced fresh mango
- 1/2 cup (90 g) chopped tomato
- 1 tablespoon plus 1 teaspoon (13 g) minced shallot
- 1 teaspoon minced fresh parsley
- 1/4 seeded, minced jalapeño, or to taste
- 1 teaspoon balsamic vinegar
- Hot sauce
- Salt and pepper
For Dirty Rice Bites:
- 1 cup (107 g) Dirty Rice
- 1 cup (182 g) prepared white beans (such as Navy or Great Northern), mashed
- 1/2 cup (60 g) all-purpose flour
- High heat neutral-flavored oil, for cooking
INSTRUCTIONS:
For Mango Salsa:
- In a small bowl, combine the minced mango, chopped tomato, minced shallot, parsley, and jalapeño.
- Add balsamic vinegar and season to taste with hot sauce, salt, and pepper.
- Set the salsa aside to let the flavors blend.
- It can be made ahead of time and refrigerated airtight for up to 2 days. If refrigerated, bring the salsa to room temperature before serving.
For Dirty Rice Bites:
- In a medium-size bowl, combine the cooked Dirty Rice and mashed white beans. Stir together well.
- Scoop 2 tablespoons (40 g) of the mixture and form into small round patties, approximately 2 inches (5 cm) across. Place them on a baking sheet.
