INGREDIENTS:

  • 3 tablespoons neutral oil, such as corn or canola
  • 1 tablespoon cumin seeds (optional)
  • 1 small red onion, finely chopped
  • 1 1/2 pounds all-purpose potatoes, peeled and shredded or minced
  • 1 tablespoon garam masala or curry powder, or to taste
  • Salt and freshly ground black pepper
  • Pinch of cayenne
  • 1/4 cup chopped fresh cilantro leaves

 

INSTRUCTIONS:

  1. In a large nonstick or well-seasoned cast-iron skillet, heat the oil over medium-high heat. If using cumin seeds, add them and fry for 30 seconds. Then, add half of the chopped red onion and the shredded or minced potatoes to the skillet. Season with the garam masala or curry powder, salt, pepper, and a pinch of cayenne.
  2. Cook the mixture, stirring or tossing frequently, until the onion caramelizes, and the potatoes are lightly browned. This should take about 10 minutes, and the potatoes should remain slightly crunchy without fully tenderizing.
  3. Add the chopped cilantro to the skillet, toss the ingredients once to combine, and transfer the stir-fried potatoes to a serving platter. Garnish with the remaining raw red onion and serve immediately.

 

VARIATIONS:

Stir-Fried Potatoes, Korean Style:

  • Omit the cumin, onion, spice blend, and cilantro; use scallion instead of red onion.
  • In Step 1, add 1 teaspoon of minced garlic to the oil, and half of the scallions and the potatoes about 30 seconds later. Include about a tablespoon of minced fresh chile, such as jalapeño or Thai, or adjust to taste, or use hot red pepper flakes or cayenne according to your spice preference.
  • In Step 2, add the remaining garlic, along with a teaspoon of minced ginger, and cook for about 30 seconds.
  • Garnish with a tablespoon or two of toasted sesame seeds and serve.
