  • 1–2 pounds mushrooms

  • 1 tablespoon flour

INSTRUCTIONS:

  1. Prepare charbonnier mushrooms: Cut off caps and peel them. Wipe well. If using chanterelles and cremini, simply cut off stem tip and wipe with a dry cloth or paper towel.
  2. In a large skillet, heat olive oil and butter. Sauté shallots for 5 minutes, add mushrooms, and cook for another 5 minutes. Add pepper and salt.
  3. Pour in the white wine, cover, and cook over low heat for 20 minutes. The mushrooms will release their liquid.
  4. Meanwhile, mix together softened butter, flour, parsley, and garlic to make the parsley butter.
  5. Drain the sautéed mushrooms in a sieve over a saucepan. Place the drained mushrooms in a serving bowl and keep warm.
  6. In the saucepan with the mushroom liquid, bring it to a boil. Whisk in the parsley butter and continue whisking for 3–4 minutes until the sauce becomes velvety. Adjust the seasoning.
  7. Pour the sauce over the mushrooms in the serving bowl.
  8. Serve the creamed mushrooms while still warm.
