  • 1/4 pound dried morels
  • 6 tablespoons butter
  • 3 tablespoons flour
  • 1 cup heavy cream

  1. In a bowl of hot water, immerse the dried morels. After 2 hours, remove the morels, filter the liquid, and set it aside. Wash the mushrooms under running water to remove any sand.
  2. In a saucepan, melt 3 tablespoons of butter and stir in the flour to make a light roux. Add the morels and a ladle of mushroom liquid. Continue stirring and gradually add more mushroom liquid until it forms a smooth sauce. Simmer for 20 minutes.
  3. Stir in the heavy cream and season the mixture to taste with pepper and salt. Allow it to reduce again for several minutes.
  4. In a frying pan over low heat, melt the remaining 3 tablespoons of butter. Fry the bread slices on both sides until golden and crispy.
  5. Spoon the creamed morel mixture evenly over the fried bread slices.
