Ingredients

  • 1 cup warm water
  • 1 1/2 teaspoons salt
  • 2 tablespoons sugar
  • 3 cups bread flour
  • 2 1/4 teaspoons active dry yeast
  • 3 quarts boiling water
  • 3 tablespoons white sugar
  • 1 tablespoon cornmeal
  • 1 egg white

 

Preparations

  1. Begin by placing warm water, salt, sugar, and flour into the bread machine pan in the order listed.
  2. Create a well in the center of the dry ingredients and add the active dry yeast.
  3. Choose the Dough cycle on your bread machine and press Start.
  4. Once the Dough cycle is complete, remove the pan from the machine and allow the dough to rest on a lightly floured surface.
  5. In a separate pot, stir 3 tablespoons of sugar into the boiling water.
  6. Divide the dough into 9 equal portions and shape each into a small ball.
  7. Flatten each ball with the palm of your hand and use your thumb to create a hole in the center. Gently twirl the dough to enlarge the hole and even out the surrounding dough.
  8. Sprinkle a baking sheet with 1 teaspoon of cornmeal and place the formed bagels on it.
  9. Cover the bagels with a clean kitchen towel and let them rise for 10 minutes.
  10. Preheat your oven to 375ºF (190ºC).
  11. Carefully transfer each bagel to the boiling water, boiling for 1 minute and turning them halfway through.
  12. Drain the boiled bagels on a clean towel before arranging them back on the baking sheet.
  13. Glaze the tops of the bagels with egg white and sprinkle with desired toppings.
  14. Bake the bagels in the preheated oven for 20 to 25 minutes, or until they achieve a delightful golden brown hue.
  15. Allow the bagels to cool on a wire rack before indulging.
