The dressing features a harmonious blend of soy sauce, mirin, and wasabi for a balance of Japanese flavors. A touch of ginger adds a subtle heat, while thin slices of nori impart a briny and grassy essence. Fresh and peppery radishes, along with thinly sliced scallions, provide a refreshing crunch. To prevent the cooked soba noodles from sticking together, we toss them with vegetable oil. For those who crave extra heat, feel free to add more wasabi paste according to your taste preferences. While nori and bonito flakes contribute distinct flavors, they can be omitted if desired. INGREDIENTS:

  • 14 ounces of dried soba noodles
  • 1 tablespoon salt
  • 1 tablespoon vegetable oil
  • ¼ cup soy sauce
  • 3 tablespoons mirin
  • ½ teaspoon sugar
  • ½ teaspoon grated fresh ginger
  • ¼ teaspoon wasabi paste or powder
  • 4 large red radishes, trimmed and shredded
  • 2 scallions, sliced thin
  • 1 (8 by 2½-inch) piece nori, cut into matchsticks with scissors
  • ¼ cup dried bonito flakes (optional)

 

PREPARATIONS:

  1. Bring 4 quarts of water to a boil in a large pot. Add the soba noodles and salt. Cook, stirring often, until the noodles are tender.
  2. Drain the noodles, rinse with cold water, and drain again, leaving the noodles slightly wet. Transfer the noodles to a large bowl and toss them with vegetable oil.
  3. In a small bowl, whisk together soy sauce, mirin, sugar, ginger, and wasabi to make the dressing.
  4. Pour the dressing over the noodles. Add the shredded radishes and sliced scallions. Toss until well combined.
