Cod and Vegetables with Aioli

Cod and Vegetables with Aioli is a delicious and wholesome dish that combines tender cod fillets with an array of fresh vegetables, all accompanied by a flavorful aioli sauce. INGREDIENTS:

  • 2 pounds cod
  • 6 potatoes, sliced
  • 1 cauliflower, separated into florets
  • 12 carrots, whole, peeled
  • Handful of green beans, whole, trimmed
  • 6 hard-boiled eggs, peeled and halved lengthwise

 

FOR THE AIOLI:

  • 4–6 garlic cloves, minced
  • 1 egg yolk
  • Pepper and salt
  • 1 1/2 cup olive oil

 

INSTRUCTIONS:

  1. Poach cod 45 minutes. Or cook in oven, wrapped tightly in foil.
  2. Meanwhile, boil potatoes, and steam or boil cauliflower, carrots, and beans just until al dente.
  3. In a bowl, mash garlic with the egg yolk, pepper, and salt. Drizzle the oil in slowly, beating steadily, until the aioli becomes thick. (Is easily made in the blender as well.) Keep refrigerated until serving.
  4. On a serving platter, present the fish surrounded by the hard-boiled eggs, potatoes, and vegetables. Pass the aioli separately.
  5. This dish can be served as soon as it has finished cooking, but it is delicious cold as well. You can of course add different vegetables.
