Ingredients

For the Nuts:

  • 2 cups water
  • 3 tablespoons baking soda
  • 3 ounces (85 g) whole hazelnuts

For the Dough:

  • 1¼ cups milk
  • 1 large egg
  • 3 tablespoons amaretto liqueur
  • 4 tablespoons unsalted butter, cut into pieces
  • 3¾ cups bread flour
  • ½ cup sugar
  • 3 tablespoons unsweetened Dutch-process cocoa powder
  • 1 tablespoon plus 1 teaspoon gluten
  • 1½ teaspoons salt
  • 1¼ teaspoons ground cinnamon
  • 2½ teaspoons SAF yeast or 1 tablespoon bread machine yeast

For the Amaretto Icing:

  • ½ cup sifted confectioners’ sugar
  • 1¼ tablespoons amaretto liqueur
  • 1 to 2 teaspoons hot milk

Preparations

  1. As your culinary journey begins, preheat the oven to 350ºF (180ºC), setting the stage for the symphony of flavors that is about to unfold.
  2. Begin by preparing the hazelnuts—those delicate jewels that will grace your creation. In a saucepan, bring water to a boil and introduce the baking soda and hazelnuts. Allow them to simmer in this alchemical bath for 3 to 5 minutes; you’ll witness the water transforming to a dark hue. Gently pour the hazelnuts into a colander, rinsing them under a stream of cold water. With a deft touch, remove the skins by slipping them off using your fingers. Pat the nuts dry and arrange them on a clean baking sheet. Toast these treasures for 10 to 15 minutes, ensuring to stir them twice during the process. As they cool on the baking sheet, prepare to embrace the aromatic allure of toasted hazelnuts. Once cooled, coarsely chop these jewels, setting the stage for the symphony to come.
  3. With the nuts ready to grace your creation, it’s time to weave the tapestry of dough. In accordance with the manufacturer’s instructions, introduce the ingredients into the pan, each finding its place in the symphony of flavors. Take care to incorporate the hazelnuts, allowing them to harmonize with the rest of the ensemble.
  4. Program the bread machine for the Sweet Bread cycle, selecting a medium crust setting. Press Start, initiating the rhythmic dance of the machine that will transform this amalgamation of ingredients into a masterpiece. It’s important to note that this recipe does not align with the Delay Timer feature, ensuring that the timing of the symphony remains unaltered.
  5. As the baking cycle concludes, bask in the aroma of anticipation that fills your space. With reverence, remove the bread from the pan and place it on a rack. Nestle a sheet of parchment paper or a generous plate beneath the rack to capture any remnants of the forthcoming amaretto icing.
  6. To crown your creation, the Amaretto Icing takes center stage. In a small bowl, combine the sifted confectioners’ sugar, amaretto liqueur, and hot milk. Whisk this ensemble until smooth, achieving a harmonious blend that speaks of indulgence. To achieve the desired consistency, you may add more milk in gradual increments, guiding the icing toward perfection.
  7. With a sense of artistry, use an oversized spoon to drizzle or pour the Amaretto Icing in a gentle back-and-forth motion over the top of the loaf. The warm embrace of the bread will cool the icing, setting it into an elegant crown that adds the final touch of sweetness and sophistication.
