Chickpea Fries (Panelle or Panisse)

Chickpea fries, also known as Panelle or Panisse, are a delightful appetizer that can rival the popularity of traditional French fries. Made from chickpea flour, these fries are first prepared as a porridge, chilled, and then fried until golden and crispy. They offer a delectable combination of creamy interior and crunchy exterior, making them an excellent alternative to potato fries. INGREDIENTS:

  • Neutral oil (like grapeseed or corn) for greasing and frying
  • 1 cup chickpea flour, sifted
  • Salt and freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • Finely grated Parmesan cheese for garnish (optional)

 

INSTRUCTIONS:

  1. Grease a baking sheet or pizza pan with a rim and set it aside.
  2. In a medium pot, bring 2 cups of water to a boil.
  3. Gradually add the chickpea flour to the boiling water, along with a large pinch of salt and pepper. Whisk the mixture constantly to prevent lumps from forming.
  4. Reduce the heat to a gentle bubble and stir in the extra virgin olive oil. Cook the mixture for just a minute to allow the flavors to meld.
  5. Scoop the chickpea mixture onto the prepared baking sheet or pan and spread it into an even layer. Let it cool for a few minutes.
  6. Loosely cover the chickpea mixture with parchment or plastic wrap and refrigerate it for about 30 minutes, until it becomes chilled. You can refrigerate it for up to a day if covered tightly after it has completely cooled.
  7. In a large skillet, pour in 1/8 to 1/4 inch of oil and heat it over medium heat.
  8. Meanwhile, cut the chilled chickpea mixture into 3×1/2-inch fries, or shape them into triangles or rounds using a cookie cutter.
  9. Gently place batches of the fries into the hot oil, rotating them gently to ensure even cooking and browning on all sides. Fry them for about 3 to 4 minutes until they become golden and crispy.
  10. Once the fries are cooked, drain them on paper towels to remove excess oil.
  11. While the fries are still hot, sprinkle them with salt, lots of pepper, and a good dusting of Parmesan cheese if desired.
  12. Serve the chickpea fries hot or at room temperature, along with lemon wedges for added zesty flavor.
