Chicken Salad Recipe

You can easily make grilled asparagus on George Foreman grill. Grilled asparagus highlights the natural and subtle flavor of asparagus. Asparagus is a versatile vegetable, available throughout the year and it is used in making many sides as well as main dishes. This grilled asparagus on George foreman grill is very easy and takes only few minutes to get ready. If you want to grill something and you want to do it indoors then this recipe got you covered. George foreman is grill is super easy to use and clean-up as love.

You will be needing fresh asparagus for this recipe. Canned or frozen asparagus won’t do justice to it. The size of asparagus depends on your personal choice, thick or thin, but you will need to look for cooking time because both need different time to cook. Choose condiments to season the asparagus. Here we are using garlic powder and pepper. You can definitely bring any variation that you like. Coat with olive oil and let grill for about 6 minutes or until tender.

Once you try these grilled asparagus, you will not have these any other way. The grilling makes them flavorful and seal in all the goodness. There could not be any easier method to grill the asparagus. Indoor grill frees up space for the main dish and saves you time when in hurry. Try this and you will have it again and again. Having asparagus this way will be your new family favorite.

Preparation time – 20 minutes

Ingredients:

  • Chicken breast (Use poached chicken or leftover rotisserie chicken.)
  • Celery
  • ¼ cup Green onion chopped
  • ¼ cup Red grapes
  • 2 tablespoon Toasted almonds
  • 1 teaspoon Lemon juice
  • ¼ cup Mayonnaise
  • Salt
  • Pepper

Instructions:

  • If you want to use leftover rotisserie chicken you are good to go and jump to the next step right away. If you want to poach your chicken then place the chicken breasts in a pan and add some water and pinch of salt in it. Let the chicken simmer for about 10 minutes and then let it rest for 1-2 minutes. Then let it cool down in your refrigerator because we need cold chicken for this recipe.
  • Dice up the cold chicken breasts into small pieces of about 1-1/2 inches.
  • Toast about ½ cup almonds in a pan and let them cool completely to room temperature.
  • Dice the celery, quarter the grapes and slice green onions.
  • Season the mayonnaise with salt and pepper according to your preferences.
  • Lastly, add all the ingredients in a big bowl, pour some lemon juice on top and give it a good mix. Your classic chicken salad is ready to serve. Chicken salad is best served when cold.

 

Note: It is recommended to let the mixture chill in fridge before serving so that all the flavors meld together.Store the leftover salad in an airtight container in the refrigerator. This recipe is meant to be chilled so do not leave at room temperature for more than 2 hours. It does not freeze well. However, you can prepare the chicken beforehand and freeze it for whenever needed.
