Chicken Broth

INGREDIENTS:

  • 4 lbs. fresh chicken (wings, necks, backs, legs, bones)
  • 2 peeled onions or 1 cup chopped leeks
  • 2 celery stalks
  • 1 carrot
  • 8 black peppercorns
  • 2 sprigs fresh thyme
  • 2 sprigs fresh parsley
  • 1 tsp. salt

 

 

INSTRUCTIONS:

  1. Put all ingredients in the slow cooker.
  2. Cook on low heat for 6 hours.
  3. Let the broth cool to warm room temperature.
  4. Strain the broth to remove the solids.
  5. Keep the broth chilled and use or freeze it within a few days.
