Cherry Compote

So, what is compote? Compote is a recipe consisting of fruit, whether fresh or dried, that is stewed in syrup and other complementary flavors.

INGREDIENTS | YIELD: 2 CUPS

  • 4 cups sweet cherries, pitted and chopped
  • ¼ cup sugar
  • 2 tablespoons ice water
  • 1 teaspoon orange juice
  • 2 teaspoons cornstarch
  • ½ teaspoon vanilla

 

INSTRUCTIONS:

  1. Place all ingredients except vanilla in a medium saucepan and cook over medium-high heat. Bring to a boil for 1 minute, stirring constantly.
  2. Remove from heat and stir in the vanilla. Let cool to room temperature.
  3. Refrigerate, covered, until needed.

 

RHUBARB INSTEAD
The tartness of cherries is similar in nature to rhubarb, and equal parts rhubarb may be substituted into this recipe for the cherries. You could also use half cherries and half rhubarb for an intoxicating compote.
