INGREDIENTS:

  • 4 ounces sharp Cheddar cheese, grated
  • ¼ cup butter
  • ½ cup flour
  • ¼ teaspoon salt
  • ½ cup crisp rice cereal
  • Oil for misting or cooking spray

 

INSTRUCTIONS:

  1. Prepare the Cheese Mixture: Cream together the grated sharp Cheddar cheese and butter. You can do this by hand, but using a stand mixer will make the process faster and easier.
  2. Combine Flour and Salt: Sift the flour and salt together. Add this mixture to the cheese mixture and blend until well incorporated.
  3. Add Crisp Rice Cereal: Stir the crisp rice cereal into the cheese mixture, ensuring it’s evenly distributed.
  4. Shape and Chill the Dough: Place the dough on a sheet of wax paper and shape it into a long roll that’s about 1 inch in diameter. Wrap the dough well with the wax paper and chill it in the refrigerator for at least 4 hours.
  5. Preheat the Air Fryer: When you’re ready to cook, preheat the air fryer to 360°F (180°C).
  6. Slice the Dough: Cut the chilled cheese roll into thin slices, approximately ¼-inch thick.
  7. Prepare the Air Fryer Basket: Spray the air fryer basket with oil or cooking spray. Place the sliced cheese wafers in a single layer in the basket, ensuring they are close but not touching.
  8. Cooking Process: Cook the cheese wafers for 5 to 6 minutes, or until they turn golden brown and crisp. Once done, transfer them onto paper towels to cool.
  9. Repeat for Remaining Batches: Repeat the cooking process for the remaining slices of cheese wafers until all the batches are cooked.
