INGREDIENTS:

  • ¾ cup yellow cornmeal
  • ¼ cup flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg, beaten
  • 2 tablespoons canola oil
  • ½ cup milk
  • ½ cup shredded sharp Cheddar cheese
  • ½ cup diced ham
  • 8 foil muffin cups, liners removed and sprayed with cooking spray

 

INSTRUCTIONS:

  1. Begin by preheating your air fryer to 390°F (199°C).
  2. In a medium bowl, combine the yellow cornmeal, flour, baking powder, and salt. Mix these dry ingredients together until well incorporated.
  3. Add the beaten egg, canola oil, and milk to the bowl of dry ingredients. Mix the wet and dry ingredients together until a smooth batter forms.
  4. Gently stir in the shredded sharp Cheddar cheese and diced ham, ensuring they are evenly distributed throughout the batter.
  5. Evenly divide the batter among the 8 muffin cups lined with foil liners. This step ensures that each muffin will bake consistently.
  6. Place 4 of the filled muffin cups in the air fryer basket and bake them for 5 minutes.
  7. After 5 minutes, reduce the air fryer temperature to 330°F (165°C) and continue baking for an additional 1 to 2 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Repeat steps 6 and 7 to cook the remaining 4 muffins.
