Cauliflower Rice

Cauliflower Rice makes a delicious and healthy low-carb alternative to traditional rice and can be used in a variety of dishes as a nutritious base or side. Enjoy it as a light and flavorful accompaniment to your favorite stir-fries, curries, or as a bed for roasted vegetables.

INGREDIENTS:

  • 1 head cauliflower
  • 2 tbsp coconut oil
  • Sea salt, garlic, ginger, or ground black pepper (optional seasonings)

 

INSTRUCTIONS:

  1. Cut the cauliflower into florets and remove any tough stems. Place the cauliflower florets in a food processor and pulse until they reach a grainy, rice-like consistency. Be careful not to over-process, as it can turn into a paste-like texture.
  2. Season the cauliflower rice with sea salt and ground black pepper, or any additional seasonings of your choice such as garlic or ginger. Adjust the seasoning according to your taste preferences.
  3. Heat a large sauté pan over high heat. Add the coconut oil to the pan and let it melt.
  4. Once the coconut oil is hot, add the cauliflower rice to the pan. Sauté the cauliflower rice in the coconut oil for a few minutes, stirring frequently, until it is tender but still slightly crisp. Be mindful not to overcook it, as it can become mushy.
  5. Optional: If desired, you can add additional seasonings such as garlic or ginger to the cauliflower rice while sautéing.
