Burst Tomato Farro

INGREDIENTS:

  • 1 cup (172 g) dry farro
  • 2 1/2 cups (590 ml) water
  • 1 tablespoon (15 ml) olive oil
  • 2 packages (10 ounces, or 280 g each) grape or cherry tomatoes
  • 5 cloves garlic, sliced
  • 1/2 teaspoon dried thyme
  • Salt and pepper
  • Handful fresh basil leaves, thinly cut, for garnish
  • 1 tablespoon plus 1 teaspoon (20 ml) balsamic reduction

 

INSTRUCTIONS:

  1. Combine the farro and water in a medium-size saucepan. Bring to a boil, then reduce to simmer. Cook until tender, 20 to 30 minutes. Set aside.
  2. Heat the oil in a large skillet over medium-high heat. Add the tomatoes and toss to coat. Cook for 5 to 6 minutes, stirring occasionally, until the tomatoes just start to get some black spots and split a little. Be careful to keep the tomatoes relatively whole, rather than as a sauce.
  3. Add the garlic and thyme to the skillet and cook for 1 minute, or until the garlic is very lightly browned. Stir constantly to prevent burning. Remove from the heat and season with salt and pepper to taste.
  4. To serve, divide the cooked farro between 4 plates and arrange the tomatoes and garlic around the farro. Garnish each plate with fresh basil and drizzle about 1 teaspoon of the balsamic reduction over the dish.

 

RECIPE NOTE:

  • To make a balsamic reduction, pour 1/2 cup (120 ml) of balsamic vinegar into a small saucepan. Bring it to a boil, then reduce the heat to simmer. Cook for 10 minutes, stirring occasionally, until the vinegar thickens and reduces. For a thicker syrup, cook for 15 minutes. Store the extra reduction in an airtight container in the refrigerator for up to 2 months. Use it to drizzle over roasted vegetables or in salad dressings for an added burst of flavor.
