Braised Kale With Bacon And Golden Raisins

Sweet and smoky, this dish is not only scrumptious but good for you, too! Kale is delicious when braised until tender and flavored with bacon and sweet golden raisins. This is terrific served with grilled chicken or fish.

SERVES 6 TO 8

 

INGREDIENTS:

  • 4 bacon strips, cut crosswise into pieces ½ inch wide
  • 6 cups chopped kale (about 3 bunches)
  • ½ cup vegetable stock (page 21) or store-bought vegetable broth
  • 2 tablespoons rice vinegar
  • ½ cup golden raisins

 

 

INSTRUCTIONS:

  1. Cook the bacon in the pressure cooker over medium heat until crisp. Remove from the pan, drain on paper towels, and set aside. Remove all but 2 tablespoons of the bacon drippings from the pan. Add the kale, stock, vinegar, and raisins. Lock the lid in place and cook at high pressure for 4 minutes.
  2. Quick release the pressure and remove the lid, tilting the pot away from you to avoid the escaping steam. Add the reserved bacon to the pot and stir to combine. Using a slotted spoon, transfer the kale to a bowl and serve.
