Boulogne Fisherman’s Chowder

INGREDIENTS:

  • 2 pounds cod
  • 2 mackerel
  • 2 whiting
  • 1 1/2 pounds mussels
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 onions, finely chopped
  • 3 leeks, well washed and finely chopped
  • 3 carrots, peeled and thinly sliced
  • 3 garlic cloves, smashed
  • 1 bouquet garni
  • 2 pounds potatoes, peeled and thinly sliced
  • Pepper and salt

 

INSTRUCTIONS:

  1. Make sure the fish are well cleaned. Slice the cod into thick pieces. Remove the heads and tails of the mackerel and whiting, then cut them crosswise into generous chunks. Scrub and beard the mussels.
  2. In a large kettle, heat the olive oil and butter. Sauté the chopped onions and leeks gently until they become translucent. Add the sliced carrots, smashed garlic cloves, and bouquet garni, and cook for an additional 5 minutes.
  3. Add the thinly sliced potatoes, season with pepper and salt, and pour in 12 cups of hot water. Cook the mixture at a simmer for another 15 minutes, allowing the flavors to meld together.
  4. Now it’s time to add the fish and mussels to the pot. As the pot comes back to a boil, the fish will be almost cooked. Continue to cook for about 3 minutes, or until the mussels have opened.
  5. Gently remove the cooked fish and mussels from the pot and transfer them to a serving platter, surrounding them with the cooked vegetables.
  6. Serve the flavorful broth separately in bowls.
